Raven the Kitchen Witch's Lemon Ricotta Pancakes (Vegetarian)
       Hey there friends! Raven here, and today's recipe is one that I use quite often when eating vegetarian, as it is packed with protein and has a bit of a citrus flair to make it a great morning addition to anyone's meal plan, as citrus is known to wake us up when we are groggy and protein will keep us nice and full until lunch! As with the lasagna, this recipe was not my own creation, but has been tweaked by me to taste how I prefer, with ingredients I prefer. So without further adieu, lets get in the witchen!

Prep Time: 10 minutes

Minutes to Cook: Varies, cook until done and pancakes are not doughy but more like fluffy cakes

Number of Servings: 2 servings of either 3 or 4 pancakes each depending on size

Ingredients

3/4 cup ricotta cheese (I use part skim)

6 eggs

1 cup rolled or steel cut oats

fresh lemon zest



Directions

1. Add ¾ cup ricotta cheese, 6 eggs, 1 cup rolled oats, and fresh lemon zest to taste together in a bowl. Whisk until batter is smooth, not lumpy. 

2. In a large skillet, heat up some coconut oil (I generally use a light spray cooking oil, but you can use about 1-2 tsp of the jarred stuff as well. Yum. Heat this over medium heat, and have it warm before you add the batter to the pan.

3. Pour or scoop batter into skillet, using approximately ¼ cup of batter for each pancake, and making 3-4 pancakes per 'batch'. Repeat process of heating more coconut oil and making pancakes until all batter is used. 

This recipe makes two servings so you can either share with a breakfast guest, or prep and store in two containers. When you are ready to eat, you can serve them topped with berries or I like to do 1/2 a large organic banana and a little peanut butter. Use lemon juice as a syrup for an alternative to the sugary kind, or try to go organic instead of processed maple syrup. I will always advocate for something to be in its natural form over high fructose corn syrup which is not nutritionally valuable in any way.
