Raven's Zoodle Stir Fry (Vegan and Vegetarian Friendly!)
    Hey gang! Raven the Kitchen Witch here, and today I'm going to share another recipe that was not of my own creation, but something I've tweaked to my own tastes over the years - the zoodle stir fry!  Unless you've been living under a rock for the last decade, you know that zoodles are simply zucchini squash shaved into noodles. You don't really need a zoodle maker, any peeler type device will do and I have used a potato peeler to make zoodles before, and they taste great no matter what shape they wind up being in (plus, you get the wonderful bonus of not consuming a ridiculous amount of carbohydrates, which many of us try to watch our consumption of). Lets get cooking!

Prep Time: 15 minutes

Minutes to Cook: 10 minutes

Number of Servings: 2 servings


Ingredients

1/2 cup diced onion

4 cloves minced garlic

1/2 cup sliced mushroom

3-4 cups spiraled zucchini zoodles

1 cup roughly chopped red cabbage

3 tsp sesame oil

reduced sodium soy sauce to taste

sesame seeds (optional, but encouraged because they pack a nutritious punch!)


Directions

1. Coat a large skillet with coconut oil cooking spray and place over medium to high heat. Add ½ cup of the diced onions, 4 cloves of the minced garlic (approximately 4 tsp.), and ½ cup of the sliced mushrooms to the skillet cook until the onion is translucent and the mushrooms have softened (about 5 minutes). 

2. Next, add 3-4 cups of spiraled zucchini and 1 cup of shredded cabbage to the skillet; heat for an additional 5 minutes, making sure all ingredients are well combined. 

3. Add 3 tsp. sesame oil. and increase heat to high stirring rapidly to coat everything with the oil. Remove from heat and set aside to cool. 

4. Once cool, divide the vegetable mixture in half (makes 2 servings) top each with 1 or 2 tsp. reduced sodium soy sauce (or to taste) and sprinkle on a generous serving of sesame seeds.

   Because this recipe makes two servings, it's a perfect date night recipe that is packed with nutrients AND flavor and will make your dude curious about what kind of potions you brew up in your own witchen. If you are not vegetarian/vegan you can throw some meat into this dish as well (shrimp or chicken work great!), and if you are vegan/veggie and want to throw some firm tofu into the mix - by all means do!  This is one you can tweak 100 times and it will always remain a fresh stir fry choice that is super filling and delicious. 

   If you are counting your macros, this meal counts as green, ½ orange, 2 tsp. If you are adding meat obviously count your red container as well (this goes for the tofu-heads as well!)  If you make this recipe please drop a comment below and tell me what you think of it!
